Spicy Pad Thai

This Pad Thai recipe is one of the easiest, tastiest recipes on the blog. It’s a Thai noodle dish made with simple ingredients and can be made with chicken, shrimp or tofu! Vegan-adaptable and Gluten-Free adaptable.

Here’s a simple easy recipe for the best Pad Thai that contains very accessible ingredients and only takes about 15 minutes of actual cooking time, once the ingredients are prepped. Pad thai is a stir-fry noodle dish typically prepared in a wok and served with chicken or shrimp. While my version is not authentic to the true pad thai dish, it is easy, accessible, healthy and delicious.


Believe me, when I tell you, I’ve had a lot of Pad Thai in my life. It’s one of my favorite things to eat, and so I’ve made a practice of learning how to perfect this dish. It’s all about the flavor balance of the sauce, and the texture of the noodles.

Spicy Pad Thai

  • ½ pound frozen shrimp, peeled, deveined and thawed
  • 2 Tbsp olive oil 
  • 8 cloves minced garlic 
  • 1 Tbsp sambal oelek 
  • 2 Tbsp soy sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp apple cider vinegar
  • ¼ tsp white chili flakes 
  • 1 package shirataki noodles 
  • 1 tsp fresh minced ginger
  • 1 red bell pepper, cut into strips
  • Zest and juice of 1 lime 
  • ½ cup spiralized carrots
  • 1 cup arugula 
  • ½ cup corn 
  • Sprinkle of sunflower seeds
  • ¼ cup chopped fresh herbs 

Instructions

  1. Place your shrimp in a medium bowl. Combine olive oil, 3 cloves minced garlic and sambal oelek in a small bowl. Once combined, pour over the shrimp and toss to coat. 
  2. Rinse the shirataki noodles and cook according to package instructions. Keep an eye on the noodles and be sure to not overcook. 
  3. Place a nonstick skillet over medium heat with 1 Tbsp olive oil. Add the shrimp, remaining garlic and ginger. Sear the shrimp for 2 minutes on each side. Once cooked through, remove the shrimp from the heat and place on a plate. 
  4. In the same skillet, add the peppers and spiralized carrots. Add the frozen corn and continue cooking until defrosted. Add the noodles and saute for one more minute. Remove from heat and mix in the shrimp and lime juice. 
  5. Serve with sunflower seeds, scallions, lime wedges and fresh chopped herbs.
